Kori Millar

Award-winning restaurant manager. Accomplished chef. An integral force behind multiple Michelin star dining & entertainment establishments.


Kori draws on her extensive experience to deliver vital expertise and support for F&B and lifestyle establishment start-ups. She is an expert at bringing together a cohesive team of chefs, service staff and multiple vendors.

From recruiting quality staff, establishing standard procedures to maintaining sustainable operations and beyond, her insights, passion and wealth of knowledge are very much at the core of the service she provides.

After a 20+ year F&B career throughout Australia, UK, Spain, Malaysia and the Caribbean, Kori has been based in Singapore for 10 years.

Her career began in Wellington, New Zealand at Paradiso, where she successfully opened six restaurants for the group. She then moved to Hamilton to manage a restaurant at just 21 years old.


Kori then worked alongside Michelin-starred chefs at the exclusive London catering company Rhubarb, for discerning clientele, including the English royal family.

She moved to Sydney, Australia to work under celebrity chef Neil Perry in the Rockpool Group – as General Manager of the renowned Rockpool Bar & Grill – developing, installing and overseeing all front and back-of-house systems, as well as training of management staff. The Rockpool Bar & Grill would become a two-hatted restaurant within its first five months of operations and win a string of accolades.

In Singapore, she was General Manager of One-Michelin-starred Osia. She then became General Manager of Marina Bay Sands’ Sky on 57 with celebrity chef Justin Quek.

She then conceptualized, designed, and managed her own restaurant, Bar-Roque Grill and in 2016 received the prestigious accolade of Awards of Excellence Restaurant Manager of the Year.

She now is the director of the F&B consultancy company Hatch & Ko.
